Hide Yamamoto

We have always wanted to visit here and here we are finally!

Hide Yamamoto! This is the fifth restaurant by Chef Hide Yamamoto but the first in Singapore. We were lucky to have seats even without reservation. Perhaps we were there rather early for dinner, so the crowd isn't there yet. By the time that we leave, the restaurant is kinda pack with the dinner crowd.



The Teppanyaki Area


There are 5 different areas where you can choose to sit. If you are having teppanyaki, you can choose to sit at the area where you can see the chefs preparing your dinner right in front of you. But if you do not want to, you can also choose to sit at another area and yet able to enjoy the teppanyaki dishes.

We chose the Ramen sitting area.




The Menu








Pardon my ignorance, but I was very amazed and excited when I see the spherical ice cubes in the ice water served.




Snow Crab and Mushroom Clay Pot Rice with ANKAKE sauce, Truffle Flavor


It is served piping hot and the staff warned us about not touching the sides of the clay pot as it was very hot. The sauce(top left hand corner) is served seperately.


The serving of the snow crab meat is generous. They are definitely real crab meats and not those crab sticks that can be bought in supermarkets.


Pour the sauce into the clay pot.


Mix the sauce and rice together while pouring. Mix them well so that every grain of rice can absorb the fragrance of the sauce.




We scooped them out and eat using the side plate instead. The texture of the rice is soft and moist after mixing together with the sauce. The truffle taste is so strong that it makes me wanna have more rice! Seriously, this will taste just as good even if you are just eating the rice and nothing else.

The portion is alright to be share between 2 people if you intend to order other dishes.

Seafood Soy Ramen




It comes with prawn, scallops, bamboo shoots, seaweed, egg, corns, black fungus and cabbage.We ordered the small size ramen. To be frank, this is not the best that I have tasted. So in my opinion, this will be consider overprice if it is not served in Hide Yamamoto.

Chawanmushi Black Truffle Flan with Fresh Sea Urchin




This is a to-die-for chawanmushi. You can taste truffle every mouth that you eat. The sea urchin is indeed fresh and this is probably the best chawanmushi I've tasted. The egg is soft and smooth. The serving is small and because it is so good, I would suggest that each person have their own share.

Foie Gras Marinated in SAIKYO MISO YUZU Flavor 



The foie gras is well cooked. Slight cripsy on the outside and soft on the inside. It basically melts when you put it in your mouth. And the taste of the foie gras and the sauce lingers and make you want to have more! I totally love it!
